2006開始有機栽種，2013獲得生物動力農法認證。以原生酵母啟動發酵，依照採收當年狀況決定全數或高比例在橡木桶內發酵，不澄清不過濾，使用高比例的陳年基酒。超過五年的二次瓶中發酵培養，最後不進行添糖釋出，殘糖0g/L。口感飽滿、成熟，卻仍保有純淨、集中的平衡度，整體來說優雅且傑出，展現出不尋常的Pinot Noir的深度風味，尾韻多汁、富有活力。明顯的果實感與較厚實的酒體，徹底翻轉過去香檳只能用來作為餐前酒的印象。
